Banana Bread no nuts please

Well I had 3 banana’s sitting on my kitchen counter turning brown for days. So today I finally decided since I have this blog now I would make something with those browning banana’s. So we came up with banana bread. My husband does not like any type of nut, me on the hand would have loved to have a few walnuts thrown in the mix but oh well maybe next time. Tyler and Alyssa helped with the bread, they had fun. Tyler got sugar on the floor and Alyssa was eating the stick of butter, I know gross. She claims she did no such thing but there were teeth marks on the stick of butter! I posted a few pictures of them helping out. I try to let them help as much as possible without making a complete mess on the counter, floor, themselves, but all in good fun and it’s creating memories for them….I hope.
This recipe was really easy nothing too difficult. The kids had fun!
Ingredients
3 or 4 ripe bananas, smashed
1/3 cup melted butter
3/4 cup sugar
1 egg, beaten
1 1/2 cup of flour sifted
1 teaspoon baking soda
1 teaspoon vanilla
1 teaspoon nutmeg
Pinch of saltDirections
1. Preheat oven to 350°F.
2. Smash the bananas. I let the kids do this part.
3. Combine smashed bananas and melted butter.
4. Add sugar, beaten egg and vanilla to the banana/butter mixture.
5. Add baking soda, nutmeg and flour mix until all ingredients are combined.
6. Pour mixture into a buttered 4×8 inch loaf pan. Bake for 1 hour.
7. Let cool completely on rack. Slice and enjoy!

My first post….Waffles YUM!

Good morning everyone! My kids wanted waffles this morning so I thought this would be a great first post. My family and I love waffles, we make them all the time. During the week before school, on the weekends and sometimes for dinner! Tyler (son) wanted pumpkin spice waffles and the rest of us wanted regular waffles. Breakfast was good, just waffles and syrup! The waffle iron I use isn’t fancy. I bought it at Target for $20.00 it does the job. Since I just started making waffles from scratch I have tried several different recipes. The first recipe I found didn’t turn out very good at all, it was gross. So by testing several different recipes I found this one on allrecipes.com and of course changed a few things. They come out crispy on the outside and nice and soft on the inside just the way I like my waffles. Enjoy!
Ingredients
2 1/2 cups self-rising flour
1 teaspoon of salt
1 teaspoon of baking powder
6 tablespoons of sugar
2 eggs
1/3 cup melted butter
2 cups of milk
1 1/2 teaspoons vanillaFor Tyler’s pumpkin spice waffles I add 1 tablespoon of pumpkin pie spice to the last bit of batter. You can use less, he likes to be able to see the spice and really taste it!
Directions
1. Preheat waffle iron.
2. Mix flour, salt, baking powder and sugar.
3. In a separate bowl, beat the eggs. Add the milk, melted butter, vanilla and eggs to dry ingredients. Mix until well blended.
4. Ladel batter the into preheated waffle iron. Cook until nice and golden brown and a little crispy.Serve with your favorite fruit topping, syrup or as my daughter Alyssa likes them with snow (powered sugar).
