Five Guys Burgers and Fries
For anyone that knows me they know that I LOVE Five Guys Burgers and Fries! Since moving from Virginia Beach, VA to small town Illinois there’s not much here. One of the things I miss a lot is Five Guys! This place is great! They started in 1986 is Arlington, VA and now they have more than 300 locations is 25 states. When you first walk into this burger joint you see bags of potatoes and peanut shells everywhere. The burgers are never frozen and they are cook in front of your very own eyes. The potatoes are cut on location every morning not frozen. They serve your burger wrapped in aluminium foil and your fries in a cup then they put everything into a brown bag, they call your number and you can’t wait to take your first bite of the juicy burger and hot crisp fries!! Oh so yummy! The closest one to me is over 200 miles away. I have thought long and hard about driving that far for a really good burger, but I’m not! The good news is we will be moving to Houston, Texas in June and guess what? They have 3 locations in the Houston area so I guess I can wait a few more months! Back to the city, I can’t wait, small town living is not for me. Five Guys Burgers and Fries I will see you soon! For anyone that might run into the Five Guys Famous Burgers and Fries, you need to stop and try their burgers, you will not be disappointed! Happy eating!

Breakfast is the best meal of the day!

Pancakes
Hello everyone who reads my blog!! I have another go to breakfast recipe. Breakfast is my favorite meal of the day! I love cooking it, I love eating it, everything. If anyone out there has ever been deployed on a US Naval ship then you know that breakfast is the best meal served all day….lunch is crappy, try having a ham and cheese sandwich or even tuna sandwich on raisin cinnamon bread, take my word for it, it’s not very good but you have to eat and get back to work. Dinner is a completely different story…. you check out what they have on the line and see it’s steak and lobster so you get in the very very very very long line and when you finally make it to the food they are now serving chicken fingers and corn dogs with chips! After waiting in line for over an hour you settle for chicken fingers, then you notice it, the sign that reads “Please take no more than 4 chicken fingers!” Great times deployed on a aircraft carrier with over 5,000 people onboard!! Breakfast on the other hand….you can get made to order omelets, hash browns, waffles, fresh pancakes, some times fruit topping, warm syrup, hard boiled eggs, scrambled eggs, fresh fruit, bagels, toast, juice, breakfast is the best meal served on an aircraft carrier and most important meal of the day!

Pancakes
Here’s my recipe for pancakes. I made plain simple pancakes today. Of course you can add anything you want, chocolate chips, blueberries, pumpkin, nuts…the list can go on forever. Pancakes are really easy to make. We don’t eat pancakes as much as we eat waffles but they are still a yummy breakfast item. Sometimes we make pancakes with eggs and bacon but this morning it was just pancakes. I like to make the little sliver dollar pancakes for the kids and regular size for me and Shaun. Sometimes I will make Mickey Mouse shaped pancakes, that’s always a big hit with the kids, they love it! Enjoy and get the kids in the kitchen to help!
Ingredients
3 cups flour
4 Tablespoons sugar
1/4 tsp. salt
2 Tablespoons baking powder
3 eggs
1/3 cup canola oil
1 1/2+ cup milkDirections
1. Mix the dry ingredients.
2. Mix the wet ingredients.
3. Combine wet and dry ingredients. Add milk as needed.
4. Heat pan or griddle. Pour spoon batter into pan.
5. Flip the pancake when the top begins to bubble, cook for an additional minute or so and all done, repeat until all the batter is gone. -
Scrambled eggs and skillet potatoes
My last post was December 16….a long time ago, I know. I was doing really good about posting about every 2 days or so. I don’t know what happened….I’m going to blame it on the busy holiday season for now after New Year’s I don’t know what I will blame it on! Since we live in Illinois and our families live in Texas and Florida we always spend the holidays with ourselves, me, Shaun, Tyler, Alyssa and Kameron. We haven’t lived in Illinois very long so we do not know anyone…we are home bodies and plus it is too cold to leave the house. Just the other day it was 3 degrees when Shaun got up for work, isn’t that crazy!! 3 DEGREES! We haven’t been in cold weather like that since we lived in Iceland! Ahhh Iceland we love and miss Iceland! We will go back one of these days. After all that’s where I met Shaun and Tyler was born there, a lot of memories there. We miss you Iceland!
Anyway back to the food!
Scrambled is my favorite way to eat eggs add a little salsa and I’m happy. Here’s my take on the perfect breakfast. I made this about a week ago and just now posting it sorry for that! It’s a quick and easy breakfast takes not time at all and you will really enjoy it along with the rest of your family! I have a family of five so I use about 8 eggs and around 10 medium sized potatoes you can adjust it to your needs.
Ingredients
For scrambled eggs
8 eggs
2 tablespoons milk
2 tablespoons butter
salt and pepper to taste
For skillet potatoes
10 medium sized diced potatoes
1/4 teaspoon cumin
1/4 cayenne pepper (more if you like the heat)
2 tablespoon oil (used canola oil but vegetable oil will be fine also)
salt and pepper to tasteDirections
Scrambled Eggs
1. Melt butter is skillet over medium heat.
2. Crack eggs into mixing bowl add milk, salt and pepper.
3. Pour in eggs cook slowly over medium heat stirring constantly until they reach the desired consistency.
Skillet Potatoes
1. Dice potatoes toss in skillet with oil. Add cumin, cayanne pepper, salt and pepper.
2. Let the potatoes brown before stirring. You want them to be a little crispy. Cook until fork tender.
