• Vanilla Scones like Starbucks……well almost.

    I love the petite vanilla bean scones that are at Starbucks.  I Googled Starbucks vanilla bean scones and the recipe I found is at Recipezaar.  The recipe never calls for vanilla bean just extract.  I tried them just to see how it would turn out.  After searching for awhile I did find one that calls for vanilla sugar, vanilla extract and vanilla bean at Cookie baker lynn.   Her recipe sounds a lot better than the one at Recipezaar but unfortunately I do not have vanilla sugar or vanilla beans.  I will be on Google looking for a place to buy a pound or two of vanilla beans, I want to my own vanilla extract like the one found on Simply Recipes.  I’m so excited about that!!  Ok enough about vanilla beans, vanilla extract and vanilla sugar….back to the recipe.  I made these last night and they were ok, they needed a lot more vanilla more than 2 teaspoons.  They did turn out very crumbly and soft like the ones at Starbucks.  I have two complaints about this recipe not enough vanilla flavor and I did miss the little specks of vanilla bean that are in the ones at Starbucks other than that they were pretty good!

    Scones
    2 cups of all purpose flour
    2 teaspoons baking powder
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    1/2 cup sugar
    5 tablespoons unsalted butter
    1 cup of full fat sour cream
    1 large egg yolk
    2 teaspoons vanilla extract

    Glaze
    1 1/2 cups powdered sugar
    milk, as needed

    1. Preheat oven to 400 degrees
    2. Whisk together dry ingredients
    3. Using any method you prefer, cut the cold butter into the dry ingredients until flour resembles coarse meal.
    4. In a separate bowl, whisk together the sour cream, egg yolk and vanilla extract until blended. Add this to the flour-butter mixture and stir with a fork until dough forms a cohesive ball. Use a spatula to get the dry bits fully incorporated. (It may not seem to have enough liquid at first, but the dough will eventually come together.)
    5. Pat dough into a disk about 1-inch in height. Cut circle into 8 equal pieces (triangles). Place the pieces on ungreased baking sheets.
    6. Bake for 15 minutes or until golden brown on top.
    7. PREPARE GLAZE WHILE SCONES ARE BAKING
    8. Place powdered sugar in a medium bowl, and add water one teaspoon at a time, mixing vigorously until smooth and runny.
    9. Use a pastry brush to apply a thin layer of glaze over the hot scones. Brushing rather than drizzling gives a smoother appearance and requires less glaze.
    10. Serve immediately. Store cooled scones in an airtight container.
