Turkey Macaroni

This meal is what I call a very simple and very yummy dish. We eat this a lot at my house. It’s my favorite meal to make when I don’t feel like cleaning a millon pots and pans, this is a one pot meal! Who doesn’t love a one pot meal? Talk about easy clean up.  I probably make turkey macaroni about once a week and normally on the weekend.  Everyone love this meal in my house!
I use ground turkey all the time. I can’t even tell you the last time I cooked with ground beef.  If you have never tried ground turkey, you should give it a try it.  There really isn’t a taste different at all, and it’s better for you.  It is also cheaper to buy at least where I shop at it is.  We like it!  Now for this recipe you only need 5 ingredients!  The good news is you probably already have everything in your pantry so you don’t need to make a trip the store.  Ok here’s what you need….

Ingredients
8oz elbow macaroni
28oz can diced tomatoes with basil, garlic and oregano (I use Hunt’s brand)
1 medium onion chopped
1/2 cup chicken broth
1/4 cup chopped parsley
salt and pepper to taste

Directions
1. In a deep skillet, brown the ground ground turkey and cook the onions.
2. Add the diced tomatoes and chicken broth, let simmer for 5 mintues on medium heat.
3. Add the elbow macaroni and cook for 5-6 mintues. Cover and remove from heat and let sit until the pasta is tender.
4. Add salt and pepper to taste and toss in parsley and serve.
Easy right?

Note: You can always cook the pasta in a different pot and add it the the turkey and tomato mixture but then it would be a one pot meal! I hope you enjoy!

Black bean soup with shredded pork

Shaun moved to Texas this weekend to start his new job, the rest of us will be moving in June after Tyler is out of school for the summer.  Since Shaun is not here I thought I would make soup for dinner…Shaun hates soup.  He only eats soup when hes sick and that’s it.  I’m not sure what his deal with a nice hot bowl of soup, I could eat soup everyday of the week, he has major issues when it comes to soup!!  The same goes with stew, doesn’t eat it until he’s sick.  When he is sick it is always Campbell’s Sirloin burger with country vegetables soup.  I found this recipe in the March issue of All You.  As soon as I saw the picture I knew I wanted to make this soup, I really like black beans.  The recipe called to use a slow cooker but I don’t have one, I have never felt the need to own a slow cooker so it’s still at the store. I don’t think I will ever own one, nothing  against a slow cooker or anything. I cooked the soup on in a big pot on medium-low for 3 hours and it turned out great! The recipe had few basic ingredients, things that I use all the time.  The main reason I wanted to try this recipe was because it has chipolte chilies in adobe sauce in it and I love cooking with this little can of goodness!  I didn’t use much because the kids can’t handle the heat, wimps, just kidding!  The recipe calls for 1 tbsp of chopped chilies and tablespoon of the sauce I cut it in half and the heat was fine and you could still taste the chilies.  I did make a few changes to the recipes as I always do. I can never cook something exactly the way recipe says to.

Ingredients
Adapted from March issue of All you
1 lb dried black beans, rinsed and picked over
2 bone-in center but pork chops about (1 1/4 lb)
2 slices of bacon, chopped
1 onion, finely chopped
2 cloves garlic, finely chopped
1 Tbsp chopped canned chipotle chilies in adobe sauce
1 Tbsp adobe sauce
1 tsp ground cumin
1 1/2 tsp salt
6 cups of water

Directions
1. Combine 6 cups of water, beans, pork chops, bacon, onion, garlic, chilies, adobe sauce, cumin and salt in slow cooker.
Stove top:Cook on medium-low until beans are tender and porks are falling apart for 3 hours.
Slow cooker: cook on low until beans are tender and pork chops are falling apart, 4 to 6 hours.
2. Remove and discard bacon. Cut pork away from bones. Discard bones and shred meat. Add meat back to pot with beans. Season with addition salt and serve.

Changes I made:
After tasting it needed alot more favor.
1. I left the bacon in, who “discards” bacon anyway?
2. Added a small can of tomato sauce.
3. Added alot more salt, it really needed salt.
4. Added 1 Tbsp of worcestershire sauce.
5. Added 1 Tbsp of balsamic vingear
6. Added another tsp of cumin
7. Added to a big bowl and top with chopped yellow bell pepper and chopped green onion.  The picture in the magazine shows sour cream on top but I’m not a big fan of sour cream.
It was delish!
