  • Waffle Iron + Yummy Bread=Waffle French Toast

    Since I’m in San Antonio I wanted to share a post from my archives. This is Waffle French Toast and there is a few tasty flavored butter recipes at the bottom. Originally posted January 2009. Enjoy!

    Ever since I bought my waffle iron a few months ago I have often wondered what else I could make on a waffle iron.  I saw waffle french toast on The Early Show on CBS it was a segment about breakfast classics with a new spin.  You can imagine my excitement!  I said I much try this!  So today was the day to have waffle french toast and I loved it!  Tyler and Kameron enjoyed breakfast, Alyssa….well she doesn’t like change, she was a little upset that it wasn’t a true waffle and she was mad because it wasn’t traditional french toast but she ate it anyway with snow…powdered sugar!  Shaun was at work so he didn’t get to have any.  I didn’t use the recipe that was on The Early Show only used the cooking method.  Also on The Early Show was flavored butter even though I did not make it I wanted to share with you because the recipes sound really good.  I would have made the butter but I didn’t have any jam or preserves.  The recipes for the butter is below the french toast recipe.   If you try it let me know I would love to know how it taste.  Enjoy your breakfast!

    Waffle French Toast

    Ingredients
    Waffle French Toast
    6 large eggs
    1 cup milk
    1 tablespoon sugar
    1 1/2 teaspoon pumpkin pie spice
    1 teaspoon vanilla extract
    2 tablespoon melted butter
    10 slices of your favorite bread (bread should be thick slices about 1 1/4 inch)

    Directions
    1.Preheat a waffle maker according to the manufacturer’s instructions. Spray the surface with nonstick cooking spray.
    2.  In a bowl, using a handheld whisk, beat the eggs until frothy. Add the milk, butter, vanilla, pumpkin pie spice and sugar whisk until blended.
    3.  Dip 1 bread slice into the egg mixture and soak, turning once, 30 seconds per side. Place the bread on the preheated waffle maker, close the lid and cook according to the manufacturer’s instructions until golden brown and crisp, about 4 minutes. Keep warm while cooking the remaining bread.
    4.  Serve the French toast warm with syrup.

    Flavored Butter
    Orange butter:
    8 Tbs. (1 stick) unsalted butter, at room temperature
    1 tsp. confectioners’ sugar
    2 Tbs. orange marmalade
    Zest of 1 orange

    Strawberry butter:
    8 Tbs. (1 stick) unsalted butter, at room temperature
    1 tsp. confectioners’ sugar
    2 Tbs. strawberry jam

    Mixed Berry butter:
    8 Tbs. (1 stick) unsalted butter, at room temperature
    1 tsp. confectioners’ sugar
    2 Tbs. mixed berry preserves

    To prepare each type of flavored butter: In a bowl, using a handheld mixer, beat the butter on medium speed until soft and creamy, about 2 minutes. Add the remaining ingredients and beat until combined, about 1 minute.

    Transfer the flavored butter to a butter dish or small bowl and serve immediately, or cover and refrigerate until ready to serve.

    Makes about 1/2 cup.

  • Breakfast Pizza

    Do you ever eat breakfast for dinner? We do all the time, mainly when the hubby is working nights; he thinks its weird eat breakfast for dinner. We will eat pancakes, waffles, eggs and bacon you name it, and we will eat for dinner. The kids love it! I made breakfast pizza one night. This was first I made it; it was fun and easy. The kids helped with the pizza dough and had a blast. There are only four ingredients for this recipe, so it made for a quick breakfast or dinner in our case.

    Ingredients
    1 can of pizza dough (I used Pillsbury thin crust)
    4 eggs
    4 strips of bacon (use could use breakfast sausage also)
    4 tablespoons butter (melted)
    salt and pepper to taste

    1. Cut dough into 5 inch circles, I was able to get 4 individual pizzas. I used a bowl turned upside down to cut the dough.
    2. Brush each pizza with melted butter.
    3. Prepare pizza dough according to package.
    4. Cook bacon on stove top while pizza dough is cooking.
    5. Half way through the dough cooking crack one egg onto each pizza and season with salt and pepper.
    6. Continue cooking until the crust is golden brown and the egg is cooked to your liking.
    7. Remove from oven top with bacon or sausage.

    I’m sure there are a million ways this could be changed. I added a little salsa before adding the egg but I kept the ones for kids simple. You could even scramble the eggs if you wanted.

  • Chocolate Chip Pancake Poppers

    I had planned on posting this yesterday, but I was not feeling well, I’m here today feeling a little better. Today I have a quick breakfast treat for you from Bakerella called Mini Maple Pancake Muffins, I renamed them, I thought pancake poppers sounded fun. Everyone should know who she is by now, if for some reason you have never heard of her; you should hop on over to her blog because it is unbelievable. She makes cake pops along with cupcakes, cakes, cookies, if it has sugar and butter then she has made it. Check it out I know you will love it.

    Onto the recipe and why I do not have any pictures of the pancake poppers.

    A couple of weeks ago hubby bought me a new camera, a Nikon D3000, it is the one I wanted. I know it is not the best of the lot but I can not justify spending $1,500+ on a camera when this one has all of the bells and whistles. I received it in the mail on Tuesday, made pancake poppers Tuesday night to eat for breakfast on Wednesday. Wednesday morning I took pictures of the cute little pancake poppers, viewed them on the computer, they looked fantastic,  and put the memory card back into the camera. Well somewhere between me viewing and putting the card back in the camera I lost the pictures of the pancake poppers. Not sure what happened because I have the other pictures I took while testing out all of the new features.

    So I’m sorry to say the only picture I have of the pancake poppers is one of little Kameron shoving the whole thing in his mouth. He was probably on his third or fourth popper in this picture because he has chocolate on his upper lip. I’m pretty sure it is safe to say he liked them.
