Breakfast Pizza

Do you ever eat breakfast for dinner? We do all the time, mainly when the hubby is working nights; he thinks its weird eat breakfast for dinner. We will eat pancakes, waffles, eggs and bacon you name it, and we will eat for dinner. The kids love it! I made breakfast pizza one night. This was first I made it; it was fun and easy. The kids helped with the pizza dough and had a blast. There are only four ingredients for this recipe, so it made for a quick breakfast or dinner in our case.

Ingredients
1 can of pizza dough (I used Pillsbury thin crust)
4 eggs
4 strips of bacon (use could use breakfast sausage also)
4 tablespoons butter (melted)
salt and pepper to taste

1. Cut dough into 5 inch circles, I was able to get 4 individual pizzas. I used a bowl turned upside down to cut the dough.
2. Brush each pizza with melted butter.
3. Prepare pizza dough according to package.
4. Cook bacon on stove top while pizza dough is cooking.
5. Half way through the dough cooking crack one egg onto each pizza and season with salt and pepper.
6. Continue cooking until the crust is golden brown and the egg is cooked to your liking.
7. Remove from oven top with bacon or sausage.

I’m sure there are a million ways this could be changed. I added a little salsa before adding the egg but I kept the ones for kids simple. You could even scramble the eggs if you wanted.

Toasted Ravioli

As I’m sitting here writing this post its 8am, it’s cold and rainy outside. I’m about to drop Tyler off at school, we live too close to the school for him to catch the bus. It’s days like this that I hate getting up and wish we didn’t live so close so he could ride the bus to school. I could get him ready and feed him breakfast and send him out when we hear the bus coming. Now I have to get the other two kids up; get them in the car. Alyssa is not a morning person, don’t even think about talking to her until she has been up for at least 15 minutes. She will start kindergarten next year and I’m not looking forward to her cranky mornings. Tyler and Kameron are morning people, they wake up very easily and are always in a good mood first thing. After I drop Tyler off I will be heading to Starbucks to get a cinnamon dolce latte, my new favorite drink, I really need a caffeine boost this morning.

I’m back from Starbucks and now it’s 9am. I made baked apricot french toast this morning for breakfast, I started it last night so all I had to do this morning was put in the oven this morning. Alyssa is being hard headed, she’s hungry but doesn’t want to eat what I cooked. I’m not the kind of Mom that will make each kid a different meal, I know, I’m mean. I told her she will have to wait until lunch time to eat and it was a long time from now. I guess she got to thinking about and said “ok I will eat the French toast”; guess what she loves it because she has had it before, she said she forgot!

For dinner last night I made toasted ravioli. I found this lovely little recipe on Tasty Kitchen. I know it’s not a new concept but it’s the first time I have ever made it. I made marinara sauce for dipping, I didn’t make it, I opened the jar, so I guess you could say I warmed up some marinara sauce. Tyler and Alyssa did not want it, Kameron will eat almost anything. Tyler and Alyssa will agree with the other when it comes to food. If one says I’m not eating that, then I can guarantee the other will say the same thing. So being the mean Mom that I am told the kids the same thing I told Alyssa this morning, “The next meal will be breakfast.” They continued to play as I was finishing up dinner. When everything was ready I called them to the table and they have this look of disgust on their faces, they are a little over dramatic. This is how I deal with foods they have never eaten before. I tell them they have to at least try it once and if they really do not like it then they do not have to it eat it. I knew they would like it if they would just give it a try. They liked and Tyler took some for lunch today, I guess it wasn’t as gross as they thought it would be. My kids are so funny.

Printable Recipe
Ingredients
1 bag (about 13 Oz. Bag) Cheese Ravioli (fresh Or Frozen)
1-½ cup Italian Style Bread Crumbs
½ cups Grated Parmesan Cheese
1 cup Buttermilk
Oil, For Frying, I used Olive Oil.

Directions
1. Cook ravioli until al dente (follow directions on the package). Cool.
2. Heat oil to approximately 350 degrees.
3. Dredge ravioli in buttermilk and then bread crumbs mixed with half of the Parmesan cheese.
4. Gently place into hot oil and fry until golden brown, about 2-3 minutes.
5. Once ravioli are browned, sprinkle with remaining grated Parmesan cheese.

Meals for busy nights

This year my son is playing baseball and my daughter is playing soccer.  When I signed them up my first thought was “Man the next couple of months are going to be busy busy and what in the world am I going to cook for dinner.” The easy thing to do would to be grab fast food on our busy nights but that will get expensive and old fast.  So I started searching Mamapedia and of course there are other Moms out there with the same problem. What to cook on game night? I have three super quick, super easy meals that can be made in minutes for those busy nights and easy to clean to up. I have also given you a different variations for each meal. I really hope this helps a few Moms and Dads.




Meatball Subs
1 package of frozen Italian meatballs
1 jar of spaghetti sauce
provolone cheese slices
hoagie bread

Add frozen meatballs and spaghetti sauce to a large pan. Cook on medium-high heat for 30 minutes. Put a few meatballs on the bread and top with a slice or two of provolone cheese.
I like my bread toasted so I put it under the broiler for a few minutes. We eat the sandwiches with chips or french fries. Great meal!! Love it!
*Variation:Spaghetti and meatballs

Grilled Chicken Salad
2 pkg of pre-mixed lettuce
pint of cherry or grape tomatoes
1 red onion thinly sliced
2 pkg of pre-cooked chicken breast
Your favorite salad dressing

Mix lettuce, tomato and chicken in large bowl. Serve in individual bowls and top dressing. Dinner ready in minutes.
*Note: I like to used the seasoned chicken breast or you could buy a rotisserie chicken from the deli.
*Variation: You can also use the pre-cooked steak and of course you can add anything to this salad. Use spinach instead of lettuce, slice up a cucumber and toss that in, nuts, cheese, there’s really no end.

Quick Vegetable Pasta
1 lb of bow-tie pasta
1 pkg steam in a bag frozen broccoli
1/4 cup shredded carrots
1/2 cup sliced roasted red peppers
Parmesan cheese

Red Wine Vinaigrette
1/2 red wine vinegar
2 tablespoons dijon mustard
1 1/2 cup olive oil
salt and pepper

Cook pasta and broccoli according to package. While pasta and broccoli are cooking combine red wine vinager, dijon mustard, salt and pepper into blender and slowly add the olive oil until fully combined. Place pasta, broccoli, carrots and red peppers in a large bowl pour vinaigrette over pasta and lightly toss until everything is evenly coated. Easy and quick.
*Variation: different pasta, try different veggies, use a white wine vinegar or a balsamic vinegar. Add cooked shrimp or chicken.
