Breakfast ideas my kids love!

Mom’s are always looking for new breakfast ideas that their kids will like.  With me having three kids I know what most Mom’s are going through.  I admit on occasion I will make frozen waffles but those days are going away pretty fast.  I have been experimenting, using my kids as the test subjects.  Just last week I made fruit and yogurt parfaits and to my surprise the kids loved them.  They liked yogurt but they have never had yogurt, fresh fruit and granola all together.  I bought these cheap plastic wine glasses to serve it and I think that helped!!  This morning I made breakfast quesadillas  and everyone loves those as well.   Here are a few more things I like to make for breakfast.

Breakfast Ideas

Fruit and Yogurt Parfait-Your favorite yogurt, fresh fruit and Nature Valley Crunchy Granola Bar Oat ‘N Honey.  You can use and kind of granola I like the Nature Valley Bars and it’s usually cheaper than buying a bag of granola.
Start by adding a couple of spoonfuls of yogurt to a glass, add a few pieces of fresh fruit and top with granola. Keep layering until all the yogurt is gone. My kids loved this fast breakfast, all three of them really enjoyed it.

Breakfast Quesadillas-Eggs, breakfast sausage, cheese and tortillas.  Cook the sausage according to package.  After it’s browned add the beaten eggs, cook until eggs are completely done.  This is your filling for the quesadillas.  Place a tortilla on a warm griddle or skillet.  Add a few spoonfuls of the filling to the tortilla and top with cheese.  Fold in half, let the tortilla brown and then flip it to brown the other side.  Quick and easy!  Breakfast burritos would work as well and probably faster.

Waffle French Toast-This is a great breakfast, takes a little longer than the other two but well worth it.

Apricot Morning Muffins-I love love love these muffins!  They are so good.  I’m not the type of person to get up  extra early to make muffins during the week, I will makes these on the weekend after I get up but I’m getting up extra early to makes during the week.  I make these muffins the night before right after dinner and then I pop a couple in the microwave the next morning for breakfast.  The kids love them.  My son ate these three mornings in row he liked them so much.  This recipe calls for a jar of apricot spreadable fruit.  I’m going to experiment with different flavors of fruit…I have blueberry in the pantry now.  I might make those tomorrow night.   I will keep everyone posted on that!

As you all know breakfast is my favorite meal of the day.  I don’t know what it is about breakfast, I just love it.  I would make breakfast for lunch and dinner everyday of the week, love, love, love breakfast!  Here lately the kids have wanted nothing put pancakes for breakfast, I think I made pancakes 5 morning in a row last week!  The kids love pancakes!  I was sick of making pancakes so I was on the hunt for muffins.  I used to make muffins all the time from the little premixed packages at the store, just add milk or water….those packages.  Nothing wrong with that but I wanted to make muffins from scratch.  While on my hunt I checked out The Pioneer Women website and she just posted her morning muffins recipe. Her recipe called for orange marmalade and orange juice…and I have to be honest, not a big fan of orange marmalade, I love orange juice but not marmalade.

I got to thinking about what I could change because the muffins looked really good. Then I remembered I had a jar of apricot spreadable fruit in the fridge and apple juice…we always have apple juice.  So I headed to the kitchen to get started on the muffins.  I halved The Pioneer Women’s recipe and came out with 20 muffins and added oatmeal into the topping.  I love apricot but the kids have never tired it, I was worried that they would not like it.  I let them try one fresh out of the oven and they loved them!  Tyler had two for breakfast this morning and a tall glass of apple juice and Alyssa and Kameron had one.  Everyone liked them and I have to say I was a little surprised that they liked the muffins, I’m glad they did!  I can take a break from making pancakes!

Ingredients (Muffins)
2 cups of flour
1/4 cup sugar
1 tablespoon baking powder
1/4 butter
1/2 cup apple juice
1 10oz jar Apricot spreadable fruit (I used Smuckers)
1/2 tsp vanilla
1 egg

Topping
3/4 cup sugar
1/2 cup oatmeal
1 teaspoon cinnamon
1 teaspoon nutmeg
1 tablespoon plus 1 teaspoon melted butter
1/4 teaspoon salt

Directions
1. Preheat oven to 375 degrees.
2. Spray muffin pan with cooking spray or use cupcake cups. (I sprayed the pan and the muffins did not stick)
2. Sift together flour, sugar, and baking powder, in a mixing bowl. Use a pastry cutter or two knivies to mix in butter
3. Mix apricot fruit, apple juice, and vanilla in a seperate bowl and pour into dry ingredients.
4. Beat egg and pour into the bowl.
5. Mix all ingredients together gently, carefull not to over mix or muffins will be tough.
6. In a small bowl, mix topping ingredients.
7. Fill muffin pans with batter. Sprinkle 1 heaping teaspoon of topping ingredients over each muffin.
8. Bake for 15 to 18 minutes until done. Remove from pan and cool on wire rack.

Makes 20 muffins

Waffle French Toast

Ever since I bought my waffle iron a few months ago I have often wondered what else I could make on a waffle iron.  I saw waffle french toast on The Early Show on CBS it was a segment about breakfast classics with a new spin.  You can imagine my excitement!  I said I much try this!  So today was the day to have waffle french toast and I loved it!  Tyler and Kameron enjoyed breakfast, Alyssa….well she doesn’t like change, she was a little upset that it wasn’t a true waffle and she was mad because it wasn’t traditional french toast but she ate it anyway with snow…powdered sugar!  Shaun was at work so he didn’t get to have any.  I didn’t use the recipe that was on The Early Show only used the cooking method.  Also on The Early Show was flavored butter even though I did not make it I wanted to share with you because the recipes sound really good.  I would have made the butter but I didn’t have any jam or preserves.  The recipes for the butter is below the french toast recipe.   If you try it let me know I would love to know how it taste.  Enjoy your breakfast!

Waffle French Toast

Waffle French Toast

Ingredients
Waffle French Toast
6 large eggs
1 cup milk
1 tablespoon sugar
1 1/2 teaspoon pumpkin pie spice
1 teaspoon vanilla extract
2 tablespoon melted butter
10 slices of your favorite bread (bread should be thick slices about 1 1/4 inch)

Directions
1.Preheat a waffle maker according to the manufacturer’s instructions. Spray the surface with nonstick cooking spray.
2.  In a bowl, using a handheld whisk, beat the eggs until frothy. Add the milk, butter, vanilla, pumpkin pie spice and sugar whisk until blended.
3.  Dip 1 bread slice into the egg mixture and soak, turning once, 30 seconds per side. Place the bread on the preheated waffle maker, close the lid and cook according to the manufacturer’s instructions until golden brown and crisp, about 4 minutes. Keep warm while cooking the remaining bread.
4.  Serve the French toast warm with syrup.

Flavored Butter
For the orange butter:
8 Tbs. (1 stick) unsalted butter, at room temperature
1 tsp. confectioners’ sugar
2 Tbs. orange marmalade
Zest of 1 orange

For the strawberry butter:
8 Tbs. (1 stick) unsalted butter, at room temperature
1 tsp. confectioners’ sugar
2 Tbs. strawberry jam

For the mixed berry butter:
8 Tbs. (1 stick) unsalted butter, at room temperature
1 tsp. confectioners’ sugar
2 Tbs. mixed berry preserves

To prepare each type of flavored butter: In a bowl, using a handheld mixer, beat the butter on medium speed until soft and creamy, about 2 minutes. Add the remaining ingredients and beat until combined, about 1 minute.

Transfer the flavored butter to a butter dish or small bowl and serve immediately, or cover and refrigerate until ready to serve.

Makes about 1/2 cup.
