Breakfast Pizza
Tuesday, March 2nd, 2010Do you ever eat breakfast for dinner? We do all the time, mainly when the hubby is working nights; he thinks its weird eat breakfast for dinner. We will eat pancakes, waffles, eggs and bacon you name it, and we will eat for dinner. The kids love it! I made breakfast pizza one night. This was first I made it; it was fun and easy. The kids helped with the pizza dough and had a blast. There are only four ingredients for this recipe, so it made for a quick breakfast or dinner in our case.

Ingredients
1 can of pizza dough (I used Pillsbury thin crust)
4 eggs
4 strips of bacon (use could use breakfast sausage also)
4 tablespoons butter (melted)
salt and pepper to taste
1. Cut dough into 5 inch circles, I was able to get 4 individual pizzas. I used a bowl turned upside down to cut the dough.
2. Brush each pizza with melted butter.
3. Prepare pizza dough according to package.
4. Cook bacon on stove top while pizza dough is cooking.
5. Half way through the dough cooking crack one egg onto each pizza and season with salt and pepper.
6. Continue cooking until the crust is golden brown and the egg is cooked to your liking.
7. Remove from oven top with bacon or sausage.
I’m sure there are a million ways this could be changed. I added a little salsa before adding the egg but I kept the ones for kids simple. You could even scramble the eggs if you wanted.
